Warszawianki are delicious dumplings stuffed with meat and potatoes. The name of this dish is not fully known, but we assume that it could have been something like this: a tourist staying in Warsaw had the opportunity to try this surprising dish and, delighted with its taste, decided to take the recipe to his hometown. These filling dumplings taste best topped with melted butter and fried onion or bacon cracklings.

Ingredients:
Filling:
- 500 g of minced chicken thighs (or any other meat),
- 500 g peeled potatoes,
- white onion,
- 2-3 tablespoons of butter,
- 2 cloves of garlic,
- salt and black pepper,
- 1/2 teaspoon ground coriander,
- 1/2 teaspoon of ground cumin,
- a teaspoon of dried marjoram or other herbs.
Cake:
- 150 ml of milk,
- a teaspoon of salt,
- egg,
- 180 ml of water,
- approx. 600 g of wheat flour (or a little more).
How to do it:
1. Mix milk and water in a bowl, add the egg and salt. Successively add the sifted flour and knead the dough until it is smooth and stops sticking to your hands (use more or less flour if necessary). You can use a food processor with a special hook. Cover the dough with a cloth and set aside for about 30 minutes.
2. Meanwhile, prepare the stuffing. Peel the potatoes and cut them into small cubes (or grate them on a large-hole vegetable grater and squeeze out the excess liquid with your hands), chop the peeled onion very finely or grate them on a small-hole vegetable grater. Put the vegetables in a bowl, add the meat and pressed garlic. Add the spices and soft butter, then mix the stuffing thoroughly or knead it with your hand until it becomes a uniform mass.
3. Cut half of the dough (leave the rest covered with a cloth) and roll it out on a board sprinkled with flour. Cut out squares of approx. 5-6 cm from the dough. Place a spoonful of dough in the center of each fragment, then glue together two opposite corners, and do the same with the remaining corners. Warsaw dumplings will resemble round dumplings.
4. Prepare a steaming vessel and arrange the dumplings in its upper part. Cook for approx. 20-25 minutes. After this time, check whether the dish is ready. If you use a different type of meat, the cooking time may increase to approximately 40 minutes. Serve the cooked Warszawianki warm, poured with melted butter, accompanied by fried onions.
