The bright white color of asparagus is deceptive. Naturally initially reddish and later green, its shoots are said to have been accidentally bleached: farmers put clay caps over the shoots to protect them from the cold and animals. Due to the lack of light, no chlorophyll was formed. The asparagus remained white.
