Many people wrongly believe that it is difficult to eat soup alone. Of course, if it is prepared only with vegetables, you may feel hungry quite quickly after eating it. However, it is enough to provide a protein supplement, for example in the form of meat, to leave the table with a feeling of a full belly and not think about snacking until dinner. Of course, if you want, you can use pork meat, it will also be very tasty.
The original recipe for papal soup includes the addition of processed cheese. However, many dietitians do not recommend them for use in a healthy diet. Such cheeses are made from poor quality raw materials, and are highly processed, high in calories and have a high sodium content. A better option will be to add plain cream and hard cheese, such as Parmesan. If you want to choose a more dietary option, you can use Greek yogurt.
To prepare the papal soup, you will need:
- 1.5 l of vegetable broth,
- 400 g mushrooms,
- 100 ml of cream 18%.
- 2 carrots,
- 1 parsley,
- 1 per,
- ¼ celery root,
- 1 onion,
- 3 cloves of garlic,
- 3 grains of allspice,
- 2 bay leaves,
- a pinch of nutmeg
- salt and pepper to taste,
- a small piece of parmesan,
- 2 tablespoons of olive oil.
Meatballs:
- 400 g minced turkey meat,
- 1 egg,
- 1 onion,
- 1 clove of garlic,
- 3 tablespoons of breadcrumbs,
- ½ teaspoon of marjoram
- salt and pepper to taste.
Additionally:
- parsley for sprinkling.
Preparation:
- Start with making meatballs. Place the meat in a bowl, add chopped onion and a clove of garlic and add the egg. Also add breadcrumbs, season with marjoram, salt and pepper. Mix the ingredients. Then form small meatballs.
- Go to preparing the soupcut the peeled vegetables into cubes, slice the leek and chop the garlic.
- Then fry the leek, onion and garlic in olive oil until golden. Add chopped mushrooms. Fry until golden brown. Season them with salt and pepper.
- Add chopped vegetables, bay leaves and allspice to the boiling broth. Also add salt and cook over low heat.
- After 10 minutes, add the meatballs and cook covered over low heat for 20 minutes.
- Pour half a glass of the broth into a bowl, add the cream and mix it well. Slowly pour the tempered cream into the soup.
- Add fried mushrooms from the pan and grated Parmesan. Cook everything for another 10 minutes.
- Finally, season with salt, pepper and nutmeg to taste. Pope’s soup serve with chopped parsley.
