You can find many recipes for vegetable pancakes on the Internet, which are a great way to sneak more vegetables into your diet. If your household includes picky eaters who turn up their noses at the sight of cauliflower, this dish may be perfect. The addition of spices and cheese makes these cauliflower pancakes they taste simply delicious. Check how to make them.
To prepare this recipe, you will need:
- 500 g cauliflower (about half a head),
- 1 onion,
- 50 g of hard yellow cheese,
- 2 cloves of garlic,
- 2 tablespoons of wheat flour,
- 1 tablespoon of potato flour,
- 1 tablespoon of sour cream 18%,
- 1 egg,
- 1-2 teaspoons of curry,
- salt and pepper.
Additionally:
Separate the cauliflower florets from the core, removing as much of the hard parts as possible. Place the florets in a steamer and steam for a few minutes. The cauliflower should be semi-firm. Chop the prepared vegetable very finely and dry it in a pan (without fat) to evaporate excess water.
Chop the onion finely. Press the garlic through a press. Grate the cheese on a fine grater.
Combine cauliflower, onion, garlic, cheese, egg and cream in a bowl. Season to taste with salt, pepper and curry. Instead of curry (or together with it), you can use other spices you like, e.g. oregano or red pepper powder. Mix all ingredients thoroughly and form small pancakes from the resulting mass.
Fry the pancakes in hot oil – about 3 minutes on each side. Serve with a salad of fresh vegetables and sauce, e.g. garlic.
