On Ash Wednesday, many Poles’ tables are dominated by . However, if you don’t feel like frying them or you don’t feel like eating them like me, try a casserole without meat.. Its taste will delight you so much that you will start eating it not only on fasting days.
My Ash Wednesday casserole must include broccoli. They give it a nice texture.
As I already mentioned, There is no meat in this Lenten dish, but there are chickpeas. It is a source of protein, so it will fill you up for many hours.
Typically, casseroles use rice or pasta. This time, however, I choose millet with a mild taste, perfectly matching the other ingredients. It’s all topped off with a cheese sauce for creaminess.

Ingredients:
- 500 ml of water or vegetable broth;
- 500 g sera cheddar;
- 300 g of rinsed canned chickpeas;
- 250 g millet;
- 250 ml of full-fat milk;
- 3 broccoli;
- 1 onion;
- 3 cloves of garlic;
- 3 tablespoons of butter;
- 2 teaspoons of dried thyme;
- 1 teaspoon of sweet pepper;
- salt and pepper to taste.
Preparation:
To make a casserole without meat, I start with groats and broccoli. I pour the groats into a strainer and rinse them under cold water, mixing them with my hand. Then I pour boiling water over it to remove the bitterness. Then I cook it in water or vegetable broth until it swells (about 15 minutes). I leave the pot covered for 10 minutes.
In turn, I divide the broccoli into florets, salt them, spread them with butter, place them on a baking tray with baking paper and bake them in an oven preheated to 220 degrees for 20 minutes.
In the meantime, I make the sauce: finely chop the onion and fry it in butter in a pot along with pressed garlic cloves. Then I add milk and 400 g of cheese in batches. I cook everything over low heat until it thickens. Finally, I season it with spices. I do not bring the sauce to a boil so that the cheese does not curdle.
Grease an ovenproof dish with butter and add the groats, broccoli and drained chickpeas. I mix everything and pour the sauce over it. Finally, I sprinkle the meatless casserole with the remaining cheese and bake it in an oven preheated to 180 degrees for 15-20 minutes. until lightly browned.
