Dietitians recommend eating fish once, or preferably twice a week. Of course, their price often discourages you from purchasing them, but the nutrients they contain are worth it. One of the very valuable fish that is worth including in your diet is burbot. What does it taste like and why is burbot the healthiest fish for many gourmets? We give you a hint.
Burbot is a fish belonging to the cod familyoccurs in northern and central Europe, as well as in North America and Asia. It is a freshwater fish, sensitive to pollution, which is why it can be found mainly in clean riversincluding those flowing into dam reservoirs. The environment in which it feels great are mountain streams with a gravel bottom, and it often feeds at the bottom.
This fish has an elongated, oval body, dorsoventrally flattened, and usually grows to approximately 60 cm, but individuals measuring up to 120 cm can be found. It usually weighs about 2 kg, but the Polish record holder weighed 4 kg. Burbot has almost invisible scales and a characteristic, marbled brown-yellow color.
What does burbot taste like? It has white meat and a delicate, slightly sweet taste, without an unpleasant muddy aftertaste. It is worth adding that burbot contains relatively few bones, which makes eating much easier. This feature also makes it work well in stews.
Eating burbot has a comprehensive impact on the body because it contains a lot of nutritional value. It has a beneficial effect on immunity, heart health, nervous system and skeletal system. Burbot meat is characterized by: low in fat, but has a large amount of protein. The right amount of protein in the diet makes us feel more full. In addition, protein nourishes the body’s cells, regenerates muscles and affects the condition of the skin, hair and nails. If you are on a slimming diet and care about the appropriate calorie content of your meals, burbot will fit perfectly into your diet, because in 100 g it has only 90 kcal.

You wonder what to do with burbot? There are many options, it is a universal fish that can be baked, stewed, fried and grilled. It also tastes great with vegetables.
To prepare burbot with peppers and spinach, you will need:
- 800 g burbot fillets,
- 1 red pepper,
- 1 yellow or orange pepper,
- ½ package of baby spinach,
- 1 red onion,
- 3-4 tablespoons of olive oil,
- a few sprigs of thyme,
- salt and pepper to taste,
- 2 cloves of garlic,
- 2-3 tablespoons of lemon juice.
Preparation:
- Sprinkle the cleaned fillets with salt and pepper.
- Wash the peppers and cut into strips. Cut the onion into slices.
- Place the fish in an ovenproof dish, add chopped peppers, onion, spinach and thyme sprigs.
- In a bowl, mix olive oil with lemon juice, pressed garlic, and add a pinch of salt and pepper. Sprinkle this mixture over the vegetables and fish.
- Bake at 170 degrees for approx. 15 minutes. Baking time may be shortened or extended depending on the thickness of the fillets.
Serve the finished dish with baked potatoes or bread.
