Many people prepare stuffed peppers or zucchini for dinner, but much less often we come up with the idea of putting delicious stuffing into tomatoes. In this case, the filling is cream cheese and rice. They are very tasty, their preparation is not complicated, and they look beautiful on the table. If you are looking for an idea for an interesting appetizer, tomatoes stuffed with salad may turn out to be a hit.
To prepare this recipe, you will need:
- 15-20 tomatoes, preferably on twigs,
- 250 g of cream cheese,
- 100 g of cooked rice,
- 2 spring onions or shallots,
- 1 clove of garlic,
- 1 tablespoon of mayonnaise,
- 1 tablespoon of Greek yogurt,
- a small bunch of dill,
- salt and pepper to taste.
Remove the tomatoes from the branches, but leave the stalks. Wash and dry the tomatoes, then cut off the tops using a sharp knife. Scoop out the pulp from the center of the tomato with a knife or spoon. Be careful not to pierce right through. Transfer the pulp to a bowl – you can use it to make homemade tomato sauce. Place the tomatoes on a plate so that the remaining juice flows down.
Prepare the stuffing: cook the rice in salted water and let it cool. Mix cottage cheese with yogurt, mayonnaise, chopped onion, pressed garlic and chopped dill. Season with salt and pepper, then mix in the filling.
Place the tomatoes on a plate, fill them with stuffing and cover with a piece of the cut tomato. You can decorate with fresh dill. Place in the fridge to cool slightly and serve.
