Broccoli has been known since the times of the ancient Greeks and Romans, who appreciated their unique appearance and original taste. Over time, people from other parts of the world also learned about them.
They came to our country thanks to Queen Bona – the ruler brought them to Poland from Italy. It is worth noting that these are not the only vegetables whose presence in our kitchen is due to it. The wife of Sigismund I the Old also brought to our lands, among others: tomatoes, cauliflower, lettuce or artichokes.
Currently, people on all continents eat broccoli. This is no surprise to anyone, because it is a delicious and healthy plant, perfect for many recipes.
The list of benefits of eating broccoli is really long – there is no doubt that it is a real vitamin bomb.
Why is it worth eating broccoli? First of all, it is a valuable source of fiber, antioxidants and vitamins: A, C, K, E and those from group B. The carotenoids contained in broccoli are great for eyesight, they also provide potassium, calcium and other valuable minerals. It is also worth eating broccoli for better functioning of the circulatory system and digestive tract. They are also prophylactic in preventing the occurrence of stomach ulcers. Especially young broccoli sprouts are effective support in the fight against peptic ulcer disease.
An exceptionally valuable ingredient contained in broccoli is sulforaphane. Thanks to it, this vegetable has anti-cancer properties. In addition, broccoli – next to, among others, cauliflower, Brussels sprouts and cabbage – is a cruciferous vegetable. Its regular consumption can protect, among others: against colon or breast cancer. The already mentioned sulforaphane also prevents joint degeneration.
People suffering from diabetes can reach for broccoli without any worries – it is a vegetable with a low glycemic index. Therefore, it is also perfect for people who want to take care of their figure.
Who shouldn’t eat broccoli? This vegetable should not be included in the daily diet of people struggling with hyperacidity of the stomach or pancreas problems. People who have hypothyroidism should also limit the consumption of broccoli.
This extremely healthy vegetable works well in a variety of recipes. Today we offer you delicious ones broccoli cutlets.
To make them you need:
- 1 large broccoli,
- 1 onion,
- 1 egg,
- 8 tablespoons of semolina,
- 1/2 cup of breadcrumbs,
- 1 tablespoon of butter,
- frying oil,
- black pepper,
- sun
Boil the broccoli divided into smaller florets until soft, drain and cool.
Chop the onion finely. Brown the onion in the heated butter, stirring from time to time.
Crush the cooled broccoli with a fork and put it in a bowl, add the browned onion, egg and semolina, season with salt and pepper and mix thoroughly.
Form cutlets from the broccoli mass and coat them in breadcrumbs.
Fry the cutlets in hot oil on both sides until golden brown. Drain excess fat from fried cutlets on a paper towel.
