Okra (Abelmoschus esculentus) is an annual vegetable plant from the mallow family, cultivated for thousands of years in Africa and Asia for its for edible, green pods. Okra water is created as a result of a simple phenomenon: when fresh pods are poured with water, they begin to release the so-called mucilaginousThat is natural plant gel composed mainly of soluble polysaccharides. Analysis of the composition of this substance carried out by the team from State University of Paraíba w Brazylii (2021) showed the presence of, among others, D-galactose, L-rhamnose and galacturonic acid – compounds that create a sticky, three-dimensional structure resembling pectins known from apples or beta-glucans from oats.

Polysaccharides present in the aqueous extract of okra show the so-called pseudoplastic non-Newtonian flow – this means that the viscosity of the fluid changes depending on the movement. The drink is thicker when at rest, but becomes thinner when stirred or swallowed. After ingestion, it is formed in the digestive tract thin, a gel layer that physically limits the contact of digestive enzymes with starch and simple sugar moleculesinfluencing the rate of their decomposition and subsequent absorption in the small intestine.

Although the drink’s contemporary popularity results from dietary trends, its use has much older roots. In traditional West African communities, okra pods were soaked in water to extract a mild drink used for digestive problems and inflammation of the digestive tract. Okra, a plant probably originating from the region of today’s Ethiopia and Sudan, then spread to the Middle East and India, and with the transatlantic trade it reached North America. There, in the 18th and 19th centuries, both whole pods and aqueous extracts began to be used in folk medicine in the southern United States as a means of protecting the stomach.

Okra water is a drink with a very simple composition and at the same time a surprisingly wide range of effects. The pods of this vegetable contain few calories – about 22 kcal in 100 grams – and provide many valuable nutrients. They include, among others:. vitamin C, vitamin K, folic acid, magnesium and natural plant fiber. This fiber has a unique feature in that it turns into a delicate, slightly slippery gel upon contact with water. It is released into the water when fresh pods are soaked and is responsible for most of the health effects observed by people who regularly drink okra water.

The best documented effects of okra are on sugar levels. A meta-analysis of clinical trials prepared by the University of South Africa in 2026 showed that okra preparations help reduce fasting blood glucose levels and the HbA1c result, an indicator showing the average sugar level in recent months. In people with type 2 diabetes and prediabetes, glucose levels dropped and the body reacted more calmly after meals. This is because okra gel slows down the absorption of sugars in the intestines.

A study by Abdul Wali Khan University (2023) confirmed that substances from okra weaken the action of enzymes responsible for the breakdown of starch, that is, they reduce the rate at which glucose is produced. In other words: sugar rises more slowly, without sudden spikes that cause drowsiness, fatigue or sudden hunger pangs.

Okra water also affects digestion because the gel covers the inside of the stomach and small intestine with a soothing layer. A study published in 2025 by scientists from Egypt (The Journal of Basic and Applied Zoology) showed that okra mucus helped animals with damaged stomach linings regenerate faster – it reduced irritation, supported healing and strengthened the natural protection of the stomach. This is a very important tip because the method of extracting mucilagin was almost identical to that used for preparing home-made okra water. Side effects of using okra water

Okra water contains naturally occurring oxalateswhich may increase the risk of deposit formation in people prone to kidney stones. They are also found in okra fructans, fermentable carbohydrates belonging to the FODMAP groupoften causing flatulence or intestinal discomfort in people with irritable bowel syndrome. Okra water is a light drink that is almost self-made. Just leave the pods in water for a few hours. The safest place is to start from one glass a day. If the body responds well, the amount can be gradually increased. In most cases, it is a simple and gentle way to support your daily diet.

Ingredients:

  • 4-5 fresh okra pods,
  • about 2 cups of water,
  • optional: a slice of lemon or a pinch of cinnamon.

Recipe:

  1. Wash the pods thoroughly under running water.
  2. Cut them lengthwise or cut into slices.
  3. Place in a jar or large glass.
  4. Pour about 2 cups of water.
  5. Set aside for 8-12 hours (preferably overnight).
  6. In the morning, remove the pods and drink the resulting infusion.

The flavor will be milder by adding lemon or a bit of cinnamon. Most often, the drink is drunk in the morning, before breakfast. Okra water is well tolerated by most people, although it can sometimes cause bloating or gas.
