The choice of cod is essential to guarantee the quality of typical dishes during the festive season. Even at the point of sale, it is possible to assess whether the fish has been correctly cured and preserved through visual and sensory signs, even if at first glance the piece appears to be in good condition.

Warning signs in color and stains

Experts from , an association focused on consumer protection and the analysis of food products, highlight that the color of the meat is one of the first aspects to be observed.

Pieces with yellowish, brownish tones or dark spots may indicate problems in the curing process or conservation. On the other hand, a light and uniform flesh usually suggests a safer and more stable product.

In the case of packaged cod, pay attention to damp areas or signs of drainage inside the bag. Excess moisture compromises the texture of the fibers and increases the risk of deterioration, even if the product is still within its expiration date.

Texture and aroma: reliable indicators

Cod firmness is a simple and effective test: when pressing, the fish must offer resistance. A soft, spongy or crumbly texture indicates that quality has been affected. These changes are often a consequence of temperature variations or inadequate storage.

The smell is equally important. A well-cured cod has a mild and clean aroma, while strong, acidic or unpleasant odors may reveal that the product is not fit for consumption. Despite being a very reliable signal, many consumers end up ignoring it.

Curing and labeling: attention to detail

The way the cod was cured and packaged deserves care. Pieces that are too dry, brittle or, on the contrary, excessively moist, may indicate imbalances in the salting and drying process. The presence of salt crystals is natural, but any sign of mold, even superficial, should lead to the product being rejected.

Clear labeling conveys confidence. Species identification, origin and conservation instructions are indicators of quality control and producer transparency.
