What if we tried the traditional honey pot a little differently this year? Little honey balls disappear from the table before you say honey. They are easy to prepare and taste just as great as a classic dessert. An ideal choice for anyone who wants to make Christmas cookies a little special and surprise the family with something new.
Medovník, as we know it today, was inspired by traditional Russian desserts and originally originated in the tsar’s court in the 19th century. Legend has it that Tsar Alexander I wanted to create a dessert that would smell like a beehive, and that’s how the first recipe was created.
Honey is not only in it for taste. It has preservative effects, thanks to which the dessert stays supple for a long time. The original recipe also included a pinch of spices, such as cinnamon or cloves, which are more likely to be found in its alternative versions today.

Dough
Mix 500 grams of plain flour with 2 teaspoons of baking soda in a bowl. In another bowl, beat 2 eggs with 200 grams of powdered sugar, add 60 grams of melted butter and 4 tablespoons of honey. Gradually add flour to this mixture until you get a smooth dough. Divide the dough into two parts, roll them out on baking paper into thin sheets and bake in an oven preheated to 180°C for about ten minutes. Leave the plates to cool.
Form a crumb from the cooled sheets. You can break them into smaller pieces and grind them with a blender or by hand with a rolling pin. This crumb will form the base of the balls. Beat the softened butter for the cream and gradually add the caramel condensed milk to it. The resulting cream should be smooth and soft.
Gradually work the prepared crumb into the cream until a malleable mass is formed. If the mixture is too thin, add more crumbs, if it is too thick, you can add a teaspoon of milk. Cover the finished mixture with food film and put it in the fridge for at least two hours so that it hardens and is easier to work with.
Balls
Once the mixture has set, start forming small balls about the size of a walnut. Roll each ball in ground nuts or finely crushed cookies, whichever you prefer. You can also try coating in cocoa or coconut if you want to make the taste a little special. Stack the finished balls in paper cups and store them in the refrigerator.
Let the balls rest before serving, ideally overnight. The flavors combine beautifully and the dessert becomes more supple. Honeydew balls are a great choice not only for the Christmas table, but also as a small gift for your loved ones. Pack them in a decorative box or bag and please someone you love.
