Eggs baked in avocado They will work well as an appetizer, a filling breakfast or a tasty dinner. You will surely like this combination of ingredients. Remember that avocado contains lots of healthy fatty acidsvitamins and minerals. Combined with eggs, which also contain valuable nutrients, e.g. protein, they create a harmonious duo that should often appear on our plates.
To prepare four servings of the dish, you will need:
- 2 ripe avocados,
- 4 eggs,
- 2 slices of bacon,
- half a bunch of chives,
- salt and pepper.
Eggs baked in avocado you can administer it yourself. They will taste great when eaten fresh sourdough bread, or a crispy baguette and a light salad with fresh vegetables.
Wash the avocado, cut it in half and remove the seeds. Deepen the hole after removing the seed with a spoon. Place the avocado pieces, skin side down, in an ovenproof dish. You can place the fruit on slightly crushed aluminum foil, which will make the mini casseroles more stable during baking (the eggs inside will not spill out).
Place bacon or salmon on the bottom of the avocado. You can fry the bacon slightly. Crack an egg into the hole left by the seed. If you are afraid that the egg will leak, crack the egg into a glass first, use a spoon to put the yolk into the avocado and fill with the egg white. You can also place pieces of bacon on the surface of the eggs.
Put the ovenproof dish in the oven preheated to 200° C and bake for about 15 minutes until the whites set. Baked avocado is tastiest when the egg white is baked but the yolk remains slightly runny.
Serve the dish warm, sprinkled with salt and pepper and fresh, chopped chives.
