Why is it worth frying in clarified butter? First of all, this product has high smoke point, approx. 250 degrees Celsiuswhich reduces the risk of the food burning. Additionally, it prevents the formation of compounds harmful to health, including cholesterol oxides and lipid peroxides. Clarified butter is made by gradually heating the butter, which allows it to remove water and ingredients such as milk proteins in the form of casein and milk sugar, i.e. lactose. When butter is heated, the foam is removed so that only the fat remains. It is also worth adding that clarified butter can be stored in the refrigerator much longer than classic butter.

Clarified butter in traditional Indian medicine, i.e. Ayurveda, it is considered a medicinal product. It contains a lot of vitamins and minerals, such as: vitamins B, D, E, K, as well as potassium, zinc, phosphorus and copper. It also contains short- and medium-chain fatty acids and CLA acid, which are believed to have a metabolism-boosting effect. Clarified butter also has a beneficial effect on digestion, immunity and skin condition. Of course, although it has some beneficial effects for the body, you should not overdo it and use it in reasonable amounts. Among other things, because it is high in calories, 100 g contains approximately 900 kcal. Large amounts of clarified butter in the diet may contribute to increased cholesterol levels. It should also be noted that frying is not the healthiest method of food processing. Therefore, it is better to use it occasionally, focusing primarily on cooked or baked dishes.

To prepare this recipe, you will need:

  • 500 g mushrooms,
  • 1 onion,
  • 2 cloves of garlic,
  • 2 tablespoons of lemon juice,
  • 4 tablespoons of clarified butter,
  • salt and freshly ground pepper to taste,
  • a pinch of chili flakes,
  • 1/3 teaspoon of basil,
  • 1/3 teaspoon of thyme,
  • 1/3 teaspoon of rosemary,
  • ½ bunch of parsley.

Preparation:

  1. Start by cleaning the mushrooms. You can also peel them, but this is not necessary. Dry the mushrooms thoroughly and cut them into slices.
  2. Finely chop the onion and garlic, then fry in clarified butter until golden. Sprinkle them with salt as well.
  3. Add the chopped mushrooms, mix everything, cover with a lid and fry over medium heat.
  4. After a while, add lemon juice, mix and fry for another 2-3 minutes covered.
  5. Remove the lid, add all the herbs and chili.
  6. Fry for a while, stirring occasionally, until the water evaporates.
  7. Finally, sprinkle the mushrooms with parsley.

You can serve mushrooms prepared this way with fried, baked or grilled chicken breast. Another solution is to treat them as an addition to breakfast, e.g. with scrambled eggs and fresh bread. You can also use them as a stuffing for pancakes, pancakes or omelets.
