Ingredients:

  • 150 g of pasta, e.g. gimlets,
  • 100 g of smoked bacon,
  • small onion,
  • 20 g of butter,
  • a spoon of flour,
  • 100 ml of milk,
  • 100 ml whipping cream (30%),
  • 50 g of parmesan,
  • 40 g of blue cheese,
  • a teaspoon of oregano,
  • a pinch of nutmeg,
  • salt, pepper (to taste).

How to do it:

1. Boil the pasta al dente in salted water. Strain.

2. Cut the bacon into cubes and fry in a dry frying pan. When the fat has rendered out, add the diced onion. Fry until the onion is translucent.

3. Melt the butter in a pot. Mix with flour. When the flour is lightly browned, add some of the milk. Mix until the ingredients are combined and add the rest of the milk. Heat over low heat, stirring constantly. When the mass begins to thicken, add the heavy cream and continue to mix until a uniform mass is obtained. Season everything to taste with nutmeg, salt and pepper.

4. Add about 35 g of grated parmesan and crumbled blue cheese to the béchamel sauce. Continue to heat over low heat, stirring occasionally, until a uniform mass is formed again. Mix oregano into it.

5. Mix the pasta with the bacon and onion from the pan and the sauce. Transfer to a greased ovenproof dish. Sprinkle with the remaining Parmesan.

6. Place the ovenproof dish in the oven preheated to 190°C. Bake for about 20-25 minutes – until the top of the casserole is lightly browned.
