Nut-caramel cake is a layered dessert based on nut sponge cake and cream cream. The whole thing ends lightly chewy, crunchy topping giving the cake a beautiful appearance. It combines the sweetness of caramel with the distinct flavor of nuts, thanks to which it will delight guests and household members. It cuts well and looks great on the plate.

Ingredients:
Cake:
- 200 g of sugar,
- 150 g ground walnuts,
- 130 g of wheat flour,
- 6 eggs, size L or XL,
- a teaspoon of baking powder.
Cream mass:
- 500 ml of cream 36%,
- 250 g mascarpone serka,
- 3 tablespoons of powdered sugar,
- teaspoon of vanilla extract.
Icing:
- 150 g chopped walnuts,
- 50 g of butter,
- 3 tablespoons of honey,
- 2 tablespoons of sugar.
How to do it:
1. Prepare the dough. Beat the egg whites until stiff, gradually adding sugar at the end. Then add one yolk at a time, mixing at low speed. Gently mix in the flour mixed with baking powder and ground nuts with a spatula.
2. Divide the mass into three equal parts. Bake each of them independently in a 24×24 cm baking tin (lined with baking paper) at 180 degrees Celsius for 15-18 minutes. Remove and cool.
3. Prepare the cream mass. Whip the cold cream with mascarpone cheese and powdered sugar until stiff and thick. Finally, add vanilla extract.
4. Prepare the icing. Melt the butter, honey and sugar in a small pot. Add chopped nuts and cook for 2-3 minutes until the mixture thickens slightly. Set aside to cool slightly.
5. Assemble the dough. Place one cake layer back into the pan. Spread 1/2 of the cream cheese and cover with the second layer. Repeat the cream and cake layer.
6. Spread the caramel-nut icing on top. Put the whole thing in the fridge for at least 6 hours.
7. Serve the nut-caramel cake after cooling.
