Classic vegetable salad it contains mainly cooked vegetables, so it can apparently be considered healthy. Unfortunately, it also contains quite a lot of mayonnaise, and one spoonful of this popular sauce provides as much as 160-170 kcal.

However, just replace the mayonnaise with Greek yogurt to make it diet salad for dinner. Its flavor can be enhanced by adding horseradish or mustard – or both.

  • 2 carrots,
  • 3 potatoes,
  • 1 parsley (root),
  • ½ celery (root),
  • 2 eggs,
  • 3 pickled cucumbers,
  • 120 g canned peas (about ½ can),
  • 150 g of Greek yogurt (thick),
  • 2 teaspoons of horseradish,
  • 1 teaspoon of mustard,
  • salt, pepper (to taste).

Peel and cook root vegetables (carrots, potatoes, parsley and celery). When they cool down, cut them into small cubes.

Boil the eggs hard (8 minutes after the water boils). Cool, peel and cut into small cubes.

Cut the cucumbers into similar-sized cubes.

Drain the peas from the brine.

Combine all ingredients in a large bowl. Pre-mix them.

In a separate bowl, mix yogurt, horseradish and mustard. Mix the dressing into the salad. Season everything to taste with salt and pepper.

Put the salad in the fridge for a few hours to let the flavors mingle. Taste the salad before serving. Season it again if necessary.
