To prepare the dough, you will need:
- 350 g of wheat flour,
- 120 g of soft butter,
- 80 g of powdered sugar,
- 75 ml of warm milk,
- 3 eggs, size L or XL,
- 2 teaspoons of instant yeast,
- ½ teaspoon of salt.
Ingredients for the filling:
- 100 g of dark chocolate,
- 75 g of powdered sugar,
- 60 g of butter,
- 15 g cocoa powder.
Additionally:
- 1 egg for brushing.
Prepare the dough. Mix the lukewarm milk, half the sugar and yeast in the bowl of a mixer. Set aside for about 10 minutes or until small bubbles appear on the surface.
Add the eggs, then the rest of the sugar, flour and finally salt. Slowly knead everything with the dough hook until a sticky dough is formed and all ingredients are mixed.
Gradually add the very soft butter, about 1 tablespoon at a time. Knead slowly until all the butter is added and combined. Increase the mixer speed to high and knead for about 20 minutes or until the dough is very soft, stretchy and elastic.
Cover the bowl with a kitchen cloth or cling film and set aside in a warm place. Leave to rise for 1-1.5 hours or until doubled in volume.
Prepare the filling. Finely chop the dark chocolate and place it in a heatproof bowl with butter. Melt them together in the microwave in 30-second intervals.
Mix with sifted powdered sugar and cocoa. Set aside to set.
Assemble the bun. Line a 30×11 cm cake tin with baking paper and grease it lightly.
Press the air out of the risen dough and place it on a lightly floured surface. Using a rolling pin, roll out the dough into a large rectangle measuring 30×50 cm.
Spread the filling onto the rolled out dough, leaving the edges free. Fold the edges inwards, completely covering the filling. Gently roll out the whole thing with a rolling pin, not worrying about the chocolate mass that flows out.
The dough should measure approximately 30×40 cm. Divide them into three strips and roll each of them into a roll. Weave them into a braid and place them in a cake tin. Brush the bun with beaten egg and set aside for about 30-45 minutes until it fills the entire dish.
Put the cake in the oven preheated to 180 degrees Celsius and bake for 40-45 minutes, until the top is nicely golden. Remove the curly bun from the oven and allow it to cool before removing from the tin.
