I like such dinners – simple, quick to prepare, extremely filling. We are happy to eat them with my family, but it happens that I do more and take to work. These Chicken pancakes They are very tasty, in my recipe there are also mushrooms, onions and cheese, but you can easily modify it according to your needs.
Pancakes:
- 160 g of wheat flour,
- 100 ml of water,
- 100 ml of milk,
- 1 egg,
- 1 tablespoon of melted butter.
Filling:
- 500 g of cooked chicken meat,
- 1 onion,
- half a teaspoon of dill,
- 100 g of cheese,
- 100 g of mushrooms,
- canola oil,
- Optionally, a spoon of water,
- Salt and pepper.
Sos:
- A can of tomatoes,
- 1 red pepper,
- 50 ml of cream 30%,
- Salt and pepper.
Mix all ingredients for pancake dough or mix thoroughly with the rod to a homogeneous mass. Set aside for 10-15 minutes. Heat the pan, slightly grease and fry thin pancakes until golden brown. Set aside
Finely chop the cooked chicken meat. Cut the onions and mushrooms into small cubes. Fry in a little oil until they soften and evaporate. Add meat, dill and season with salt and pepper. If the stuffing seems dry, add a tablespoon of water. Remove from heat, add grated cheese and mix thoroughly.
Cut the peppers into very small cubes and fry for a while in the pan. Add canned tomatoes and cook for about 10 minutes until the sauce thickens. Add cream, season with salt and pepper. Heat, but don’t cook long.
Apply a portion of stuffing on each pancake and roll it into a roll or envelope. Place them in an ovenproof dish, pour the sauce. Bake for 10 minutes at 180 ° C until chicken pancakes heat up and lightly brown.
