Chicken, but in a different setting, my hit recipe for a weekend dinner

When the weekend is approaching, it is good to have a recipe for something delicious – in my case they are often Chicken rolls with mushrooms. Simple to make, aromatic, my whole family eats them. I am also happy to serve them to guests.

  • 4 single chicken breasts,
  • 500 g mushrooms,
  • 50 g of cheese in slices,
  • 1 onion,
  • 1 bunch of parsley,
  • 2 tablespoons of sour cream 18%,
  • ½ teaspoon salt,
  • ½ teaspoon of grated lemon peel,
  • ½ teaspoon of pepper.

Breading:

  • 2 eggs,
  • 2 tablespoons of wheat flour,
  • 2 tablespoons of breadcrumbs,
  • ½ teaspoon salt,
  • ¼ teaspoon of black pepper.

Additionally:

Wash each chicken breast, dry and cut in half lengthwise. Break them with a meat pestle into thin slices.

Pour a tablespoon of oil into the pan. Add finely chopped onion and fry it for 2-3 minutes, to vitrify. Add grated mushrooms with large mesh, salt, pepper and lemon zest. Fry everything on low heat to evaporate the entire fluid.

When the mushrooms cool, add cream and finely chopped parsley to them. Mix the whole very thoroughly.

Place 1-2 slices of cheese first on each slice of meat, so that it completely covers the surface of the chicken. Then put a roll from the mushroom stuffing and wrap the whole in a tight roulade, rolling up the ends inwards.

Wrap each roulade in cling film and put it in the freezer for 2 hours.

Prepare the coating.

Eggs bent on a deep plate.

On two separate plates, spread the flour and breadcrumbs evenly. Add pepper and salt to your breadcrumbs.

Coat each roulade first in flour, then in the egg and finally in a roll.

Heat a thin layer of oil in a frying pan. Put the rolls on hot fat and fry them on all sides for nice browning. Put ready in an ovenproof dish.

Cover the dish with a lid or aluminum foil and put in the oven set to 180 degrees Celsius. Bake the dish for 45 minutes, removing the cover for the last 5 minutes.
Serve chicken rolls with mushrooms hot, preferably with the addition of light salad.
