Why bake from sour milk

Although sour milk may seem like an unnecessary food to many, the opposite is true. In fact, it is a hidden treasure for many dishes, and especially a baking ingredient. This is an excellent alternative if you don’t have eggs on hand at home.

Sour milk contains lactic acid, which reacts with baking soda or baking powder. This reaction releases carbon dioxide, thanks to which the dough rises beautifully and the resulting product is wonderfully fluffy and pleasantly supple.

The lactic acid gives the pastry a slightly sour taste that contrasts nicely with the sweetness and the resulting cake has a richer taste. At the same time, it is a healthier alternative because sour milk contains probiotics, which are beneficial for healthy gut microflora and better digestion.

Ingredients needed

Before you start preparing the recipe itself, prepare all the necessary ingredients. For the dough, you will need 2 cups of sour milk, 2 cups of semi-coarse flour, 1.5 cups of powdered sugar, 2 tablespoons of cocoa, 2 teaspoons of baking soda and 2 tablespoons of oil and raisins. For the topping, you can use spicy jam, solidified fat and chocolate.

Preparation procedure

Put all the listed ingredients for the dough in a bowl and mix them thoroughly with a wooden spoon to create a smooth and compact mass. Then pour the finished dough into a pre-greased and floured tray and put it in an oven heated to 220 degrees Celsius. After about 15 minutes, reduce the temperature to 180 to 200 degrees Celsius. Allow the finished cake to cool, spread with jam and cover with warmed chocolate.

A few final tips

Instead of raisins, you can add chopped nuts, candied fruit or almonds to the dough. You can also sprinkle the topping with chopped nuts or coconut.
