Cake with walnuts is a moist bake for those who love the nutty flavor and are looking for a quick and simple recipe. If you want you can add also dates, raisins or candied peels. This dessert is perfect for both everyday and special occasions. This dish is also characterized by a long shelf life, which is a big advantage for busy and busy people.
Before you start preparing the recipe, get the appropriate form. It will work well cake tin with dimensions of 35×11 cm.
To prepare this recipe, you will need:
- 250 g of wheat flour,
- 200 g chopped walnuts,
- 150 ml of hot coffee,
- 130 g of dark sugar,
- 100 ml olive oil,
- 80 g of Greek yogurt,
- 1 teaspoon of baking soda,
- 1 teaspoon of vanilla extract,
- 1 tablespoon of baking powder,
- 1 pinch of salt.
You can sprinkle the finished cake with powdered sugar or serve it richly with a scoop of vanilla or cream ice cream.
Mix the coffee and olive oil together in a bowl. Add brown sugar, yogurt and vanilla. Mix everything until combined.
In a separate bowl, mix flour, baking powder, salt, baking soda and chopped walnuts.
Mix the dry ingredients into the wet ingredients, stirring with a spatula until well combined.
Pour the mixture into a 35×11 cm baking tin lined with baking paper. Smooth the top with a spatula or knife.
Put the cake with walnuts in the oven preheated to 180 degrees Celsius and bake for 45-55 minutes, until the stick is dry.
Leave the cake to cool in the tin for 10 minutes, then transfer it to a rack to cool completely. Serve cold, cut into slices with a serrated knife.
Store the baked goods at room temperature for 5 days or in the refrigerator for up to 7 days, always in an airtight container.
