Raw red onion has a distinct, sharp taste and characteristic spiciness. For some it is an advantage, for others it is a barrier. Marinating changes a lot:

  • the taste becomes milder – aggressive sharpness disappears, delicate sweetness and acidity appear,
  • the texture is still firm – a good marinade does not soften the onion, but gives it a pleasant crunch,
  • use in the kitchen is greater – goes not only with bread, but also with meat, salads and grilled dishes.

Pickling does not deprive onions of their value, as some people believe. It’s still there a vegetable rich in sulfur compounds, antioxidants and fiberalthough of course some vitamins sensitive to temperature or long storage may decrease.

In reasonable quantities – absolutely. Many people wrongly treat vinegar pickle as something “chemical”, but it is one of the oldest ways of preserving food.

Pickled onion:

  • supports digestion – acidity stimulates the secretion of digestive juices,
  • retains fiber – beneficial for the intestines and satiety,
  • provides antioxidants – red onion is famous for its high content.

However, you need to remember two things. Firstly, the pickle usually contains sugar and salt, so people on restricted diets should take this into account. Secondly, if you have a sensitive stomach or reflux, acidic additives in large amounts may cause discomfort.

Preparing such preserves takes a few minutes.

Ingredients:

  • 2 medium red onions
  • 1/2 cup of vinegar (spirit or apple)
  • 1/2 cup of warm water
  • 1-2 tablespoons of sugar (according to your preference)
  • 1/2 teaspoon of salt
  • optional: pepper, mustard, bay leaf

Preparation:

  1. Peel the onion and cut it into thin slices or half rings.
  2. Transfer to a clean jar, pressing lightly.
  3. Mix vinegar, water, sugar and salt in a bowl.
  4. Pour in the onion so that everything is covered.
  5. Close the jar and set aside in the fridge.

You can taste the first feathers after about an hour, but the best taste effect appears after a few hourswhen all the ingredients combine and penetrate each other. This onion will last for several days in the refrigerator.

If you like bold but not overpowering flavors, you’ll definitely like pickled red onion. Make one jar for the tasting, but be prepared that when its contents are gone, the family will demand more. Enjoy your meal.
