The cake is as soft as a cloud, pleasantly moist with apples. Hen blush is a dessert hit

Maiden blush this is a cake that no one can pass by indifferently. Not only does it look beautiful, but it also attracts attention with its unique taste. Roasted, sour apples with a hint of cinnamon perfectly break the sweetness of the fluffy cake.

This is one of my favorite suggestions for a weekend afternoon with coffee and tea.

  • 1.5 kg of sour apples,
  • 2 teaspoons of cinnamon,
  • 1-2 tablespoons of lemon juice (to taste),
  • cane sugar (to taste),
  • 1 tablespoon of potato starch.

Ingredients for the cake:

  • 8 eggs (size L),
  • 200 g of sugar,
  • 140 g of oil,
  • 160 g of wheat flour,
  • 180 g of potato starch,
  • 2 teaspoons of baking powder,
  • 15 g kakao
  • 3 tablespoons of milk.

Additionally:

  • powdered sugar (for sprinkling).

Peel and core the apples. Cut the flesh into cubes. Place the apples in a pot with a thick bottom. Sprinkle with lemon juice.

Roast the apples until soft over low heat for about 20 minutes, stirring occasionally. While doing so, season with cinnamon and sugar. Finally, stir in the potato starch. Set aside to cool.

Beat the eggs with sugar until light and fluffy – with a mixer at high speed, for about 8-10 minutes. Reduce the mixer speed to minimum. Pour the oil into the eggs in a thin stream. Mix for a while.

In batches, sift flour, starch and baking powder into the egg mixture. Briefly mix the ingredients with a spatula until combined.

Mix cocoa with milk. Divide the dough into two parts, approximately in a 2:1 ratio. Mix cocoa into a smaller part.

Line a 24×24 cm baking tin with baking paper. Pour approximately half of the light dough into the mold and smooth its surface. Put the form in the oven preheated to 175°C. Bake for about 10-12 minutes.

Remove the baked cake from the oven and carefully spread the apples over it. Put the cocoa dough on the filling and the rest of the light dough on top. Mix the cakes lightly with a skewer. Place the pan back in the oven. Bake for about 40 minutes.

Remove the baked cake from the oven and set aside to cool. Sprinkle with powdered sugar before serving.
