Salmon baked on rice with parsley parsley is a complete and well-balanced meal for the whole family, which you can prepare in one dish. The secret of this dish is two-step baking, first the rice and then the fish. This makes all the ingredients perfect. A delicate mayonnaise paste highlights the flavor of the salmon and makes it soft. This dinner will be a real hit among your household, I will definitely ask for more.

To prepare this recipe, you will need:

  • 700 g salmon fillets with or without skin,
  • 500 ml of boiling water,
  • 300 g white basmati rice,
  • 1 large lemon,
  • 2 cloves of garlic,
  • 2 tablespoons of olive oil,
  • 1 handful of parsley,
  • 1 tablespoon of mayonnaise,
  • 1 tablespoon of honey,
  • 1 teaspoon of salt,
  • 1 teaspoon of black pepper,
  • ¼ teaspoon of turmeric,
  • ¼ teaspoon red pepper flakes.

Additionally:

parsley for sprinkling.

Grease the baking tin with olive oil. Add rice, salt and chopped parsley. Mix everything and spread it evenly over the entire surface.

Pour boiling water into the pot, mix and cover the pot tightly with aluminum foil. Place everything in the oven and bake for 12-15 minutes until most of the water is absorbed.

Press the garlic through a press and grate the lemon peel on a small grater. Add mayonnaise, honey, turmeric and red pepper flakes. Mix everything. Cut the remaining lemon into slices.

Sprinkle the salmon fillets with salt and pepper on both sides. Spread the top with the prepared mayonnaise-honey paste.

Remove the ovenproof dish from the oven and carefully remove the foil. Place the fillets on the rice and cover the whole thing with foil again. Place the dish back in the oven for 15-20 minutes until the fish is tender and the rice is fluffy.

Serve the salmon baked on rice warm, sprinkled with chopped parsley.
