When it’s hot, I don’t feel like fat and warming food. In the morning I am looking for something that saturates me but will not burden me. I like breakfast from seasonal products and those that I can prepare in 10 minutes. Recently on Instagram and Tik progress appeared Viral breakfast, i.e. eggs on zucchini. As soon as I saw the recipe on the @Foodlajf.pl profile – a culinary photographer and the author of simple recipes – I immediately decided to test it. Zucchini finally costs pennies, and is a culinary chameleon. Fits crunchy pancakes, cream soup or pasta. I haven’t given her for breakfast yet, so I was very interested in such an experiment.

Eggs on zucchini – a recipe for 2 portions

Ingredients:

  • 2 medium courgettes,
  • 4 eggs,
  • a tablespoon of olive oil,
  • small clove of garlic (optional),
  • salt and pepper to taste,
  • fresh herbs (e.g. basil),
  • Fresh bread.

Preparation method:

Wash the zucchini thoroughly and use a vegetable peeler, prepare thin stripes from it (so -called ribbon pasta).

Heat the olive oil in a frying pan, add the peeled and chopped garlic and fry for a while. Add the zucchini, mix and simmer for 2-3 minutes, until it softens slightly, but it will still remain firm (it is not to fall apart).

In zucchini pasta, make four “nests”, or free spaces. Stake in the eggs.

Fry under cover until the proteins are cut and the yolks remain liquid. Season with salt, pepper, sprinkle with fresh herbs and serve immediately with fresh bread. And if you like expressive accents, sprinkle the eggs with crushed feta or black cumin.

In my opinion, this breakfast has everything you need. It is easy to prepare, full of taste and nutritional values, and at the same time light. Sometimes the best ideas in the kitchen are made of a small number of food products and simple connections.
