Do you like traditional cream cakes, but want to prepare something a bit more expressive? Then you need to know the recipe for Caramel cake. It is very similar to the well-known and popular Napoleonka, but the addition of caramel mass makes this version of the dessert even better. The deep, caramel flavor and delicate sweetness are pure perfection.
Caramel cake this is my favorite, especially for important occasions. It’s rare for guests not to take extra helpings.
Ingredients for the cream:
- 350 ml of milk,
- 50 ml whipping cream (30%),
- 50 g sugar,
- 1 tablespoon of vanilla sugar,
- 3 yolks,
- 20 g of wheat flour,
- 10 g of potato flour,
- 100 g of soft butter,
- 5 tablespoons of kajmak mass.
Ingredients for the frosting:
- 100 g of powdered sugar,
- 2 tablespoons of milk,
- 1 teaspoon of cocoa.
Additionally:
- 1 sheet of puff pastry (275 g).
Boil the milk and heavy cream with half the amount of sugar and vanilla sugar in a pot. Once you have brought the mixture to a boil, remove the pot from the heat.
Beat the yolks with the other half of the sugar until light and fluffy. Mix it (to get rid of lumps) with flour and starch sifted through a sieve.
Slowly pour the hot milk into the yolks, stirring the mixture vigorously with a kitchen whisk. Then pour it into the pot and bring it to a boil again, stirring constantly. When the mixture thickens, set it aside to cool.
Cream the butter until fluffy. Without stopping mixing, add a spoonful of the heated kajmak mass to the butter, and then a spoonful of the pudding mass. Mix until you obtain a uniform, thick cream. Cool it in the fridge.
Unfold the sheet of puff pastry. Cut into 21 equal rectangles (approximately 5×10 cm) and place them on a baking tray lined with baking paper. Prick the dough with a fork. Put the tray in the oven preheated to 200°C. Bake the cake for about 15 minutes – until golden brown. Cool.
Connect the cake rectangles in groups of 3 and fill them with cooled cream (to obtain 7 portions).
Prepare the icing with sugar and milk. Set aside 2 tablespoons and combine with cocoa. Spread portions of cake with light icing. Decorate with cocoa powder, placed in a bag with the corner cut off (you can use a toothpick to create eye-catching flores).
