This is the best cake for Women's Day. Perfect and easy to prepare

Don’t feel like turning on the oven to bake the cake? Or maybe you are afraid that? In both situations, we have the perfect solution – no-bake cheesecake with mascarpone and kajmak. It will be perfect not only for Women’s Day, but also for other important celebrations, because it tastes amazing and looks great on the table. Nothing stops you from serving this dessert with your afternoon Sunday coffee. Be sure to write down the recipe for it.

No-bake cheesecake with mascarpone and kajmak is made from nine ingredients that we usually already have in the fridge or kitchen cabinet. However, if not, we will buy them in any store anyway. Thanks to their combination, you will create the best dessert that will satisfy even the most demanding gourmets.

Interestingly, we do not use any cheese from a bucket or cottage cheese for this cheesecake. We replace them with mascarpone and whipping cream.

What ingredients do we need to make a no-bake cheesecake with mascarpone and kajmak? Here is the exact list:

  • 500 g mascarpone;
  • 300 ml whipping cream 36%;
  • 250 g of cream;
  • 150 g melted butter;
  • 150 g butter biscuits;
  • 80 ml of cream 30%;
  • 1 bar of dark chocolate;
  • 2 tablespoons of cocoa;
  • 2 teaspoons of gelatin.

To make a no-bake cheesecake with mascarpone and kajmak, first prepare its base: crush the biscuits with a rolling pin or grind them in a blender. Then pour them into a bowl, add cocoa and melted butter and mix everything.

Place the prepared base on a 24 cm diameter cake tin lined with baking paper. We level it all out, press it down and put it in the fridge for 30 minutes.

In the next step, we make the cheese and caramel mass. To do this, mix the mascarpone and kajmak in one bowl and in another bowl beat the whipping cream until stiff.

Gently, in batches, add the whipped cream to the mascarpone and kajmak mixture, mixing with a spatula. Then dissolve the gelatin in a small amount of hot water. Add 3 tablespoons of the cheese-caramel mixture, mix everything and combine with the remaining ingredients.

Pour the prepared mixture onto the bottom of the cake and put it in the fridge for at least 3 hours. Finally, we make the chocolate icingso we melt the dark chocolate in a water bath and add 30% cream. and mix everything until smooth.

When the chocolate icing cools down, pour it over the no-bake cheesecake with mascarpone and kajmak.. Put it back in the fridge for an hour. Before serving, decorate the dessert with nuts, coconut flakes or grated chocolate.
