Śnieżna Góra cake perfectly combines fluffy sponge cake, sweet and sour apples and a delicious, creamy layer of whipped cream. Perfect for a cup of coffee or tea for all family celebrations. It is light, melts in your mouth and delights with its delicacy. You’ll definitely find it hard to resist reaching for a second helping.

Before you start preparing the cake, get the right form. A rectangular one will work well baking sheet measuring 25×35 cm.

To prepare the dough, you will need:

  • 80 g of wheat flour,
  • 150 g sugar,
  • 4 eggs, size L or XL,
  • 40 g of potato flour,
  • 1 pinch of salt,
  • 3 tablespoons of tea,
  • 100 g apple jam.

Ingredients for the apple layer:

  • 1 kg of apples,
  • 3 tablespoons of sugar,
  • 2 packages of lemon jelly,
  • 500 ml of water,
  • ½ teaspoon of cinnamon.

Ingredients for the cream:

  • 500 ml whipping cream 36%,
  • 3 tablespoons of powdered sugar,
  • 1 teaspoon of gelatin,
  • 50 ml of hot water.

Additionally:

  • 50 g of white chocolate,
  • 10 g of dark chocolate.

Prepare the dough. Beat the egg whites with a pinch of salt until stiff. Gradually add sugar, mixing constantly. Then add one yolk at a time, mixing at low speed. In a separate bowl, mix the sifted wheat and potato flour. Add them to the egg mixture in 2-3 batches and mix gently with a spatula so that the foam does not fall.

Pour the mixture into a 25×30 cm baking tray lined with baking paper. Bake the cake for 25-30 minutes, until the stick is dry. Cool, then moisten with tea. Spread the cooled base with apple jam.

Prepare the apple layer. Peel the apples, remove the seeds and cut into cubes. Put them in a pot with sugar and cinnamon. Cook them over low heat until soft and remove the fruit from the heat.

Dissolve the jelly in hot water and add the mixture to the stewed apples. Mix quickly and set aside to cool and slightly thicken. Pour the slightly thickening apple mixture onto the jam-covered base and put the whole thing in the fridge.

Prepare the cream. Dissolve gelatin in hot water and leave to swell for 5 minutes. Then heat it in the microwave, mix and set aside to cool slightly. Whip the very cold cream until stiff, adding powdered sugar and gelatin at the end. Mix everything well.

Assemble the dough.Pour the whipped cream onto the apple mixture. Sprinkle white chocolate shavings on top.
