Christmas Eve dinner is a moment when the table is set with dishes eaten once a year. In my family, one of these must-haves is Christmas Eve doves – a vegetarian version of a valued dish. Filled with buckwheat and dried mushrooms, very aromatic, melting in your mouth.
Although their preparation requires a bit of patience, I assure you that it is worth it.
- 1 head of white cabbage,
- 400 g buckwheat (unroasted),
- 100 g of dried forest mushrooms,
- 250 g mushrooms,
- 1 onion,
- 2 cloves of garlic,
- 1 tablespoon of chopped parsley,
- 2 teaspoons of marjoram,
- salt, pepper (to taste),
- clarified butter (for frying),
- 500 ml of vegetable broth.
Soak the dried mushrooms in water. Drain (do not throw away the water in which they were soaked – use it, for example, to prepare mushroom soup) and chop them quite finely.
Cook the buckwheat as described on the package.
Remove the core and damaged leaves from the cabbage. Heat water in a large pot, but do not bring it to a boil. Turn off the burner and add the cabbage to the pot. Remove after 3-4 minutes. Separate the outer, blanched leaves from the head. Heat the water again and blanch another of the outer cabbage leaves. Cut the hardest parts from the blanched leaves.
Rinse and chop the mushrooms finely. Chop the peeled onion and garlic cloves. Fry the onion in clarified butter. Add garlic to the pan, and after a while add mushrooms and mushrooms. Fry, stirring occasionally.
Add the well-drained groats to the pan. Fry for a while. Season with marjoram, parsley, salt and pepper.
Place portions of the stuffing on the largest cabbage leaves. Wrap the stuffing with leaves, forming cabbage rolls.
Line the ovenproof dish with the remaining leaves. Arrange the cabbage rolls tightly in the dish. Pour hot broth over. Cover the top of the cabbage rolls with cabbage leaves.
Place the dish with the cabbage rolls in the oven preheated to 180°C. Bake for about an hour.
You can serve Christmas Eve cabbage rolls alone or with mushroom sauce.
