Salad with bean sprouts is a combination of fresh vegetables, a distinctive soy-sesame sauce and the citrus aroma of kaffir leaves. Such an addition can completely change the character of the dinner.
- 1 can of mung bean sprouts (about 200 g without liquid),
- 1 onion shallot,
- ½ red pepper,
- a few leaves of kaffir (Thai lime),
- 1 small clove of garlic,
- 1 tablespoon of soy sauce,
- 2 tablespoons of sesame oil,
- salt, pepper (to taste),
- 1 teaspoon of sesame seeds.
Drain the bean sprouts from the brine. Transfer to a large enough bowl.
Chop the shallot. Cut the peppers into thin sticks. You can use sweet pepper (preferably long, e.g. ramiro variety), and if you want the salad to be spicy, use chili pepper. Mix the vegetables with the bean sprouts.
Chop kaffir leaves (you can use frozen) and add to the salad.
Press the garlic through the press. Mix with soy sauce and sesame oil. Pour the sauce over the salad ingredients and mix. Season everything to taste with salt and pepper.
Roast sesame seeds (white, black or a mixture) in a pan. Sprinkle them over the salad. Serve immediately.
