Surimi is a product made mainly from white fish meat, most often pollock or cod. It is crushed, cleaned of fat and water, and then mixed with protein, starch and spices. The mass is then formed into characteristic sticks, often colored pink, imitating lobster or crab meat (which is why they are also called crab sticks).
Party salad with surimi is a great idea for a quick snack. It comes out light, creamy and full of colors. It combines the delicate taste of crab sticks with crunchy canned celery and the sweetness of corn. The addition of peppers and shallots gives it freshness, and the sauce based on mayonnaise, Greek yogurt and mustard – a perfect creamy consistency with a slightly spicy note. The whole thing is complemented by a bit of lemon juice and dill, which beautifully emphasize the taste.
Ingredients:
- 250 g surimi sticks,
- a jar of canned celery,
- a can of small canned corn,
- sweet red pepper (oblong),
- small shallot,
- 3 tablespoons of mayonnaise,
- 3 tablespoons of Greek yogurt,
- a teaspoon of mustard,
- a bit of lemon juice,
- dill for sprinkling.
How to do it:
- Cut the surimi sticks diagonally into thin slices. Wash the pepper, remove the seeds and cut into small strips. Peel the shallot and chop very finely.
- Drain the canned celery and corn. If the celery has long strands, you can chop it lightly to spread it better in the salad.
- In a bowl, mix mayonnaise, Greek yogurt, mustard and lemon juice. Season with salt and pepper to taste.
- In a large bowl, combine surimi, peppers, shallots, celery and corn. Add the sauce and mix thoroughly until combined. Place the salad in the fridge for at least 30 minutes to let the flavors mingle. Before serving, sprinkle with fresh dill.
