To prepare this recipe, you will need:

  • 250 g of semi-skimmed cottage cheese,
  • 250 g light spelled flour + a little for sprinkling,
  • 2 eggs,
  • 1 tablespoon of olive oil,
  • 1 teaspoon of salt,
  • 1 teaspoon of baking powder.
  • poppy seeds for sprinkling.

Place the cottage cheese in a large bowl. Add eggs, olive oil and salt. Using a fork, crush the cottage cheese thoroughly and mix all the ingredients until a uniform mass is formed.

Add spelled flour and baking powder. Start mixing and then knead everything by hand until a smooth and uniform dough is formed. If the dough is slightly sticky, you can sprinkle your hands with a little flour.

Form a ball of dough and flatten it slightly. Divide it into 6 equal parts. Form a ball from each part and place it on the prepared baking tray. Flatten gently with your hand. Make a hole in the center of each ball. You can use a glass or simply make a hole with your finger and slightly enlarge it. If there is any leftover dough, combine it and form an additional bagel.

Sprinkle the tops of the bagels with poppy seeds, pressing lightly to make them stick. Place the tray in the preheated oven and bake for about 30 minutes until the bagels are golden. After baking, remove them from the oven and place them on a rack to cool.
