Pork chop rolls require a little longer preparation than traditional cutlets. However, it is really worth spending more time on them. This unique dish with an old Polish character will make you look at pork loin differently.
If you are wondering what to make with pork loin, think about roulades. The taste is superior to traditional pork chops. This old Polish dish once landed on the tables of the nobility, but over time it found its way into households. Why are roulades better than pork chops? These are pieces of meat wrapped in cheese and mushroom stuffing. But that’s not all – the finishing touch to this dish is crispy bacon, which adds flavor to the entire dish. Just the thought of country-style rolls makes my mouth water.
I learned the recipe when, together with the Rural Women’s Association, we were preparing a treat for a meeting of seniors. We were about to make pork chops when one of our friends suggested the idea for country rolls. Although there was no traditional breaking of the meat, the effect was stunning. The seniors couldn’t praise the dish enough and everyone left the meeting with the recipe.
Allow yourself about an hour and a half to prepare country-style rolls. It’s a bit longer than it takes to prepare pork chops, but at least you won’t have to stand in front of the pan.
Ingredients:
- 400-500 g pork loin,
- 8 slices of raw bacon,
- 100 g of yellow cheese,
- white onion,
- 100 g mushrooms,
- 2 tablespoons of butter,
- salt and black pepper to taste.
Preparation method:
Start by preparing the stuffing. Peel and chop the onion, clean the mushrooms and cut into slices. Fry the onion in butter in a pan, add the mushrooms and salt. Heat over medium heat until the water from the mushrooms evaporates. Finally, add pepper. Cut the cheese into long, thin strips.
Now it’s time to process the meat. Cut the pork loin into slices and break into cutlets, sprinkle with salt and pepper, as for pork chops. Place the stuffing on each piece of meat and arrange the cheese strips. Roll up each piece of meat and wrap it in bacon, pierce it with a toothpick so that everything holds together.
Place the rolls in a baking bag, place them in a baking tin and put them in the oven preheated to 180°C for about 40 minutes.. At the end of baking, cut the sleeve so that the bacon becomes browner and crispier. You can also bake country-style pork chop rolls without a sleeve, in an ovenproof dish. However, remember to remove the lid from the pot 10 minutes before the end of baking.
I always serve country-style pork chop rolls with potatoes and carrots, peas or beetroot.i. Groats and fresh vegetable salads also go well with them. I would rather not serve salads with them, because Polish additions go well with typically Polish dishes. Red or white cabbage salad, pickled cucumbers or boiled cabbage will go perfectly with them.
Another, more modern approach is to serve rolls with baked vegetables. Since you’re turning on the oven anyway, make the most of it. Chop the pumpkin, carrot, parsley or celery root, drizzle with olive oil and sprinkle with herbs. You can also bake potatoes at the same time. This is an excellent option for people who have an oven with two levels. You will make the entire dinner in one go.
