Tapenade is a classic French sandwich spread consisting of olives, capers and anchovies.. This version is even enriched with tomato paste. The whole thing has a very characteristic and expressive taste – slightly salty and fishy. Perfect as an addition to breakfast or dinner. It is served with bruschetta – light bread toast, drizzled with olive oil and rubbed with garlic.. Bruschetta with tapenade is an interesting alternative to regular sandwiches, which will surely appeal to lovers of French and Italian cuisine.

Ingredients:

Tapenada:

  • 200 g green pitted olives,
  • 50 g capers,
  • 2 cloves of garlic,
  • 40 g of tomato paste,
  • juice of half a lemon,
  • 3 anchovy fillets,
  • 3 tablespoons of olive oil,
  • 2 pinches of salt,
  • 2 pinches of pepper.

Additionally:

  • 2 French baguettes or Italian ciabatta,
  • 4 cloves of garlic,
  • 15 ml olive oil,
  • played padano for decoration,
  • parsley for decoration.

How to do it:

1. Prepare the tapenade. Drain the olives and capers from the brine. Put them in a bowl. Add all remaining ingredients. Mix everything with a blender until smooth.

2. Cut the baguettes or ciabatta into 2-3 cm thick slices. Rub them with garlic and drizzle with olive oil.

3. Preheat the oven with the grill function and bake the slices for 5 minutes. You can also use a microwave with a grill function or a special sandwich maker.

4. Serve the bruschetta with tapenade, slices of grana padano cheese and chopped parsley.
