Austrian cuisine has many dishes worth trying. We’re not only talking about traditional Wiener schnitzels, apple strudel, or Sacher cake. There is also an interesting item on the local menu Austrian pancake soup, or frittatensuppe. How to prepare this dish? We give you a hint.

Base frittata soupalso known as Elderberry soupis a broth prepared from meat and vegetables. It’s nothing more than our traditional broth, but instead of pasta, the dish is served with pancakes cut into strips. It is also often added to the soup beef, carrots and chopped green parsley. There is also a vegetarian version of the dish made with vegetable broth without the addition of meat. This dish is eaten in Austria, Germany, Switzerland, some parts of France and Italy. It comes from the traditional cuisine of the Alpine region.

Broth for frittata soup can be prepared from beef, poultry, or a mixture of them. If you avoid eating meat, you can opt for a soup made only from vegetables, which will also taste delicious.

To prepare the dish, it is worth starting by cooking the soup, you will need:

  • 1 kg of beef with bone (e.g. brisket, patch, rib),
  • 2 liters of water,
  • 4 carrots,
  • 2 parsley,
  • 1 pair,
  • 1 onion,
  • ½ taste,
  • 2 grains of allspice,
  • 2 bay leaves,
  • a few grains of black pepper.
  • 1 teaspoon of salt,
  • parsley for sprinkling.

Preparing the broth:

  1. Start by rinsing the meat under cold water. Then put them in a large pot. Pour two liters of water and turn on the heat.
  2. Peel the vegetables and cut them into slightly smaller pieces. Opal onion.
  3. Add vegetables to cooking meat.
  4. After about 10 minutes, add allspice, bay leaves, salt and pepper.
  5. Cook over low heat for about two hours. While cooking, use a slotted spoon to skim off the scum.
  6. Strain the finished soup.

To prepare “pasta” pancakes, you will need:

  • 2 eggs,
  • 160 ml of milk,
  • 100 g of wheat flour,
  • 1 teaspoon of sugar,
  • a pinch of salt,
  • olive oil for frying.

Preparation of pancakes:

  1. While the soup is cooking, you can start preparing the pancakes. Crack the eggs and milk into a bowl and mix everything thoroughly.
  2. Gradually add flour and sugar and mix the mixture slowly. Meanwhile, add a pinch of salt.
  3. When the pancake dough is smooth, set it aside for about half an hour.
  4. Fry the pancakes in a well-heated frying pan greased with olive oil on both sides.
  5. Set aside to cool. Roll the ready pancakes and cut them into smaller pieces to create “pasta”.

Serving the soup:

  1. Place the pasta rolls in deep plates and add chopped carrots from the broth. You can also add peeled meat from cooking the broth.
  2. Pour in the broth and sprinkle with parsley.
